How come my steaks plateau at 50 C?
I can't get them to reach 55, but they overcook if I leave them in? help

It might be a turkey thermometer which is useless for steaks because the actual sensing part of the thermometer isn't the tip, it's somewhere above the tip which is too high up to measure anything but the steaks surface temp, possibly.
