What is the optimal order of removing eggs from a 12-egg carton when making 3-egg omelets? I'm looking for an elegant solution with a reasonably balanced center of gravity at all times. Picrel is my current strategy.

You don't have to do the transfer if you don't want. I just like the carton balanced and your current strategy leaves it back heavy after #1.
Also I like the pattern of mine when it's half through.
Picrel is what I usually do because I use 2 eggs for carbonara or with toast/potatoes and bacon most of the time.

OK OP here's what I got for you. This method maintains the center of gravity as close to the middle as possible at every stage, and when asymmetry is required it keeps the weight towards the back (hinge side) of the carton. I'm assuming rearrangement is not permitted, if it is then a different method is called for.

eggs sharing the same number need not be removed at the same time. the eggs share numbers simply to indicate that it does not matter which of the two eggs sharing a given number are removed first. by distributing the mass at the extreme ends rather than the center you increase the energy needed to rotate the container. if instead of using the pictured method one were to take the end-most eggs first and work their way in it would be either to tip the container over. this method keeps the center of mass in the spacial center of the container and increases the amount of energy required to tip the container when compared to other methods. this method is the best.

I go from the back to the front, so the center of gravity is maintained near the front third of the box, as that's where I grab the box to remove it from the shelf. The foremost eggs in the box are the last to go.
