It's insulated so the water doesn't actually get hot and there's a tube blowing air into the water to make it look like it's boiling. I think someone said it's a bit of a scam, they probably collect money from people who think it's real for a blessing or something.

If you really start exploring Indian food you'll find that there's a lot more than that. That's the most basic "curry" but there's plenty of Indian food that has no sauce at all and is mildly flavored or even similar to Western food in some ways. Palak paneer is basically Indian creamed spinach and its delicious.

Tandoori chicken with tamarind chutney is pretty much Indian BBQ chicken. I don't think they serve big pieces of meat like steak or ribs otherwise, everything is always chopped up. It doesn't bother me as much anymore since I'm vegetarian anyway but that's one thing I agree with criticism of for Indian food, they chop up the bones to put in curry and you end up having to deal with random bone shards and having to be careful when you eat which was annoying.

What are the best vegeterian indian dishes? I see a lot of variety at my local place, but I can't name anything beyond calling them "diced beetroot stir fry" or "the chickpea in spiced gravy thing"
