I love horse sausages, they go great with mashed potatoes and spinach. I think it's odd that some people seem to think of eating horse as borderline sacrilegious.
What are your thoughts on horse meat? In what forms does it taste the best in your opinion?

American women have a weird obsession with horses because of novels like Black Beauty. For whatever reason, equestrian pursuits were the first traditionally male past time to become acceptable for women to show interest in, and consequently every tomboy that could became a horse girl. Because horses then became a pet for women and a status symbol when their utilitarian purposes were largely obsoleted, they were gradually anthromorphized in popular culture. It soon became unnaceptable to eat them for the same reason people recoil at dogs. Their first impression of a horse is a pet and companion.

That said, horse isn't great. Much prefer beef. As a food stuff I'm not sure where the niche is. Isn't particularly great quality, and cold resistant cattle are better bang for your buck as livestock.

Literally can not even get horse meat in America anymore. The last manufacturer shut down years ago, FDA won't approve any new ones. Only way is to buy a horse and slaughter it.

We only eat it as steaks or burgers in my country but my family used to drive up to Danmark to go to Tivoli Gardens when I was a young lad. We'd get smoked horse sandwiches along the way.

Not that different to beef sausages imo. You don't really get beef sausage anyways here in Germany as it's always pork or rather veal/pork. You also have to go to specialised butchers for it.
The production often is less industrialised so the sausages are softer in texture than regular sausages.
