If I want something to taste like bacon, I'll just cook some bacon. Buying bacon grease is retarded. Your buying sub-standard lard made from subcutaneous fat which has a strong flavor that overpowers many things you cook with it. Quality lard, and tallow is made by rendering visceral fat surrounding the internal organs, not subcutaneous or intramuscular fat.

For rendering chicken fat, you're going to want high quality chickens that are minimaly processed so you can do as much of the trimming as possible. Try googling "Pasture raised chicken farm near me" and look for a farm that sells whole chickens. You will pay a premium, but the price is worth the quality. You can also tell them you're hoping to render your own fat, and they might have some extra trimmings on hand that they can give you.
