Made a killer omelette yesterday.

set some tater tots in the air fryer
beat 3 eggs for way longer than normal
sprinkle a pinch of garlic powder into the eggs and keep beating
canola oil into your nonstick pan on medium
dice up a good amount of onion and toss it in
finely chop a habanero pepper and toss that in
when the onions are translucent, pour in the eggs
while they're firming up, give the tots a good dusting of ranch powder and mash them up
flip the eggs
add the tots mash to one half of the egg disc and then cover those with shredded cheddar
fold
let sit on lower heat with a lid on for about a minute
flip the omelette to the other side and let that sit covered for about a minute
plate and sprinkle the top with some salt
et voila
bone app the teeth!

Two eggs, sunny side up. 6.5 heat with a flick of water and cover to steam it. Goes out perfect over easy with no flipping involved with very warm flavorful yolk with the barely cooked lining inside. So there is just the perfect amount of liquid the whites can soak it all up leaving nothing to waste or requiring a slice of break to mop it up.

If I fuck up and break a yolk I immediately abandon the first goal and switch in french rolled scrambled eggs. 6 heat and constantly folded in a clockwise manner until they are wet cooked. Then I take them off heat to cook an addition 30 seconds in the cooling pan before serving on plate.

I prepare this meal every single morning without fail. I fucking love eggs. If I am cutting I will crack an egg and use the suction of an old soda bottle to slurp up the yolk and make a shitload of scrambled egg whites. Hard boiled is an option but I find the peeling and cleaning too much of a chore for cold eggs.
