baking is all about intuition if you are just making bread. i only need to remember to measure out 3 cups of flour and 2 teaspoons of yeast, and shake some salt and sugar in. then i can kneed water in until i feel the hydration i want. recipes are good for finding out the baseline of a specific dough which you can replicate by remembering how it feels

Recipes are great, and they're an important tool for learning how to make new things but if you've done something a dozen times before and STILL need to follow the recipe on paper instead of eyeballing it all then you're a retard and don't "know" anything. And if you have a lot of things you've made a dozen times each then you should be able to wing nearly anything. This is what knowing how to cook means. OP obviously does not know how to bake and his friends told him it's impossible to bake without a recipe so he just mixed flour, water, and yeast into 60% hydration mid-firm goop and made it into balls and baked until brown. Which works but his bread sucks
