The humble black olive, imprisoned in plastic-lined supermarket goycans, often gets a bad rap. However, it EXCELS in chicken salad (along with tuna salad, and of course pizza), and is also available pre-sliced. The subtle flavor along with the meaty, slightly oily texture are a wonderful complement to many foods where a stronger tasting olive (often packed in equally strong-tasting vinegar) would be a detriment. Don't judge me, I have better olives too (for eating out of the jar with chopsticks at 2am)....... but in a salad or on a pizza, my little pre-sliced black buddy is usually the finest choice.

My mom always puts grapes in hers and it's disgusting. It's disgusting fresh but even worse if it sits in the fridge overnight. When I make chicken salad I usually like to add tarragon and green apples or sometimes I'll go for curry powder, garam masala, green onion and jalapeño. Maybe some cilantro. Now that I think about the curry one would probably be good with some pickled red onions and the tarragon one would probably be nice with some fennel.

Sometimes I'll add herbs, either chopped fresh or dried depending on what I have and what I feel like chopping up. Parsley, dill, cilantro are all good options. Also keep in mind that while this is delicious right away, it's even better after half a day or so in the fridge.

Grill my chicken thighs. Clean the bones and cut up the meat and skin into bit sized pieces. Mix with half as much (per weight) mayo, and a sixth as much (per weight) sweet brown mustard, some spices and herbs, some corn, and a dash of sherry vinegar. Add some pomegranate seeds if you want it to be fancier and prettier.

Season to what you prefer and mix slowly but thoroughly. If your chicken salad has become some sort of liquid, you have failed. Mayo is tasty but whoa nelly some people need to chill.

When I fix a roast chicken, I have the wings and the wishbone for my meal, then cut away the leg quarters and the breast portions for later meals. The rest of the carcass I strip the meat off by hand, saving the bones for stock. The leftover roasted chicken meat gets minced and turned into chicken salad.

I keep it simple, just adding a little sweet pickle relish, dijon mustard and some mayo. Makes enough chicken salad for about a week's worth of sammiches.
