I had some Jerusalem artichoke for the first time last year and they are amazing. If I had a garden I'd grow them there, because I've never seen them sold here locally, despite being piss easy to grow and more productive than even potatoes. I get that they are less shelf stable, but goddamn it I'd love to buy sunchokes rather than potatoes occasionally.

The hazelnut spikes look really impressive, but my experience with sugar is that it is extremely difficult to control the viscosity to the degree that you can see such a dramatic taper from the start of the drip to the bottom. I kind of wonder what they did to get those, honestly.
