I nearly started a Paella truck. Nice and simple to make, maybe do 2 or 3 variations. And to make it properly you the special pan which most people dont have so you are providing a product they cant make themselves. Also the smell is amazing and would surely snare much foot traffic.

I've said the same and he's given me excuses as to why that won't work. The gist if it is that he's too much of a control freak to ever give anyone else total control of the chicken shop. That's probably why the place does well; he puts everything through such scrutiny that there's no chance of anything going wrong.
I think another reason is likely a fear of failure. I think he's scared that if he followed his heart on this and the place failed, he'd be devastated.

To be clear, it was just a weekend stand/cart at a farmers market. I noticed that there was no substantial food meant to be eaten there. There were dumb things like white girls selling vegan cupcakes and guys selling popcorn and funnel cake but nothing meal-like. So the first thing you need to do is see if there's a hole your business can fill.
If there is, then do your research. Where I lived at the time, it's illegal for anyone to sell food not prepared in a commercial kitchen and all food businesses have to have at least one person with food service safety certifications on shift. I worked at a bakery at the time and already had that cert and I asked the bakery owner if I could use his kitchen during off hours. He said yes. Then, I got the tax ID and all that other junk and, finally, rented space at the market.
Perhaps unsurprisingly for being a spring through early autumn thing but my biggest cash cow was iced coffee. Bitches love iced coffee and mine is fucking fantastic, no fuss iced coffee. This was over 20 years ago and even then, $3 for iced coffee at a farmers market was unheard of but since it cost me less than a dime per serving plus the cost of sugar and milk (normal and homemade soy, the other milks not being common at the time), it's easy to see how it has the biggest profit margins.
