Can fresh Sea Cucumber/Scallop/Abalone/Oyster etc. be substituted 1:1 for dried & rehydrated seafoods? All of my favourite cookbooks all call for rehydrated stuff in the recipes, but I live right beside the ocean and can dive for all of it (except Abalone). Can I substitute a fresh Sea Cucumber for a rehydrated one? Would the weight be the same? Should I add salt? Are dried seafoods parbroiled or anything? Any Chinx on here who can help me out? Thx

At work we cook Sea Cucumbers and salt them . I think they lose eighty percent of their weight .
