The water composition in NYC is different than anywhere else in the world, due to the volume of bivalves in the city's plumbing. The water they drink is glacial melt from Canada that's stored in reservoirs in the Catskills and Northern Hudson Valley. Neversink and Roundout Reservoirs being the largest. This unique trait makes all pastries and baked goods from New York exceptional, compared to other parts of the world.

You're missing the point.

>Pizza is a dish of Italian origin consisting of a usually round, flat base of leavened wheat-based dough topped with tomatoes, cheese, and often various other ingredients

A " New York" pizza fits that definition so there's no reason to refer to it as anything other than just pizza. Detroit and Chicago are different and it makes sense to make a distinction

Neapolitan pizza is made with a finely milled medium protein unmalted flour. The dough hydration is about 70%. It often uses a sourdough starter. The sauce is milled San Marzanos tomatoes and salt. The cheese is bufala or fior di latte. It is cooked at 900F for about a minute. It is not uniformly browned and is rather soft. It is eaten with a knife and fork.

NY pizza is made of a malted and bleached high gluten flour. The dough often has some oil. It is usually made with fresh yeast and is cold fermented for a day or two. The sauce is usually ground or crushed US grown tomatoes with salt, oil, garlic, sugar and dried oregano. The cheese is whole milk mozzarella with a reduced moisture content. It is baked at 500-600F for 5-8 minutes. It is much more uniformly cooked, is crispier, and is eaten with the hands.

this is the right answer. Most of the difference comes down to the very high gluten flour that's used that allows for very large thin crust slices to stay firm and chewy while folded while also being crispy from the high oven temperatures. Can anyone tell me why Pizza is considered an Italian food?

Flatbread with toppings goes back all the way to Ancient Greece. Possibly back to prehistory before Greece even existed. Hell it probably showed up in other civilizations as well without even needing to be introduced to the concept. The toppings ranged from nearly anything; Fruits, cheeses, meats, oils, spices, etc.

16th century rolls around and Italy calls this obviously Greek-origin food "Pizza" (and refer to it as a peasant dish that they want no part of).

Spain brings the tomato to the old world and starts putting it on these "Pizzas" themselves (mostly just chopped up and thrown on top). The tomatoes eventually gets back to Italy who then turns it into a sauce that they throw on fucking EVERYTHING and claim everything it touches as their own invention.

Nowadays, the modern Pizza is almost entirely modified by various other cultures, but it's still considered Italian?

And don't get me started on the hundreds of different types of pasta. They did Mongolia dirty with that one.
