Idk if this is how it's made elsewhere but iirc from that docuseries a few years back, the UK gravy is made using fried bits of chicken batter/crispy bits plus a sachet of proprietary gravy granules and hot water. It all gets blitzed together until smooth

Quality and price, basically. An evolution of supply chain and operations-streamlining allowing a casual dining chain like Chilis or TGI Fridays to dispense with table service, menus, and much of the decor and just give customers a glorified hole-in-the-wall / drive-thru to get the same food. In fact, a lot of these started as literal hole-in-the-wall places as the chains often experimented with "Express" versions of their full restaurants with limited menus first. These were often found in airports, malls, and college campuses.

Now you have entirely new restaurant chains designed to exploit that very particular niche market bridging the gap between fast food and casual dining, though granted the market took a hit when Chipotle was literally killing people with food borne illnesses 10 years ago.
