As someone who has lived on both sides of the pond, American cheddar has its merits. The UK cheddar is good as an experience in and of itself, or used sparingly in dishes similarly to parmesan, but it doesn't melt well and tends to take over when used more than very sparingly in dishes. If I want a cheddar I can put on a burger, use in a cheese sauce, similar such applications, I go for the American stuff.
