I have 2 pounds of ground beef thawing out in my fridge and I have no idea what to cook it into

Soup
Brown the meat in oil on a pan.
Chop up onions, potato or add pasta, spring onion, celeriac, carrots and parsnips
Add any additional veggies you might have, like peas, broccoli, cauliflower, green beans, anything goes
Put it all in a big pot
Water
A stock of any kind
Season with herbs of any kind, rosemary and thyme are my go-to's
Salt
Pepper
DONT FORGET THE BAY LEAVES
Maybe msg if you're feeling frisky
Let that shit simmer for 2 hours without a lid
Bonus points if you reduce it to the point where it gets all thick.

for frozen ground sirloin, I freeze it in 1lb portions, and I add a sauteed onion and bell pepper, and cook taco meat, like add a simmer sauce like frontera taco which is pretty rich in chipotle, or just powdered stuff from the spice cabinet (ancho chili powder, cumin, coriander, cayenne, black pepper, garlic).
I also do a cuban picadillo dinner, where I cook up some valencia rice (with a garlic clove, and glug of olive oil). My picadillo has onion, cubanelle bell pepper, cooked in olive oil, with tomato paste, cumin, and saffron softened in chicken stock. I add capers and green olives, sometimes more pimento. Deglaze in white wine. Simmer until reduced.

For 2lbs, I'd make a lasagna, even adding a couple links of italian sausage. Paste, crushed in puree, and a can of sauce, or else your favorite spaghetti sauce. Extra can be frozen up in a stuffed shells or ziti dinner down the line, esp if you don't have ricotta on hand.

I just make rissoles (aka large burger).
get the mince, add some breadcrumbs, an egg (or tomato/bbq sauce if you don't have an egg), smoked paprika, salt, pepper
then cook in a covered frypan or roast them with some potato or onion
maybe have one with onion in a sandwich with tomato sauce.

I like to saute half a finely chopped onion and then mix that in a bowl with the ground beef. I'll also add an egg yolk. Make a patty, cook it, (I'm assuming you know the basics here), and when it's done take it out and add to the pan some flour, butter, a little pinch of sauteed onions which I forgot to tell you to save, and then some broth or water for a nice gravy. Aside from the ground beef this is all shit I have on hand. If you've never made a gravy I recommend looking up ratios, I just eyeball it. But yeah this is what I do. One pan, one cutting board, only one weird ingredient. Quick to make and clean. I'll double the gravy if I make mashed potatoes as a side

Actually.... “Cottage Pie” left unadorned (without further context) would imply slow cooked pieces of beef stew meat, like Shepherd's pie typically would. If one were to use minced (ground?? >.<) beef, one should really specify "mince cottage-esque pie".
That way people won't get confused when they expect stringy stew meat but instead they get crumbly burger meat. I, for one, would be heartily dissapointed!
