I don't really agree with your sauce pairings in general, . WTF on half of them. Escargot needs garlic wine and butter, like a mushroom.

But, bacon is good glazed, even in a sweet glaze, such as devils on horseback of every version. I had guava jam and jalapeno jam glazed versions, which is also great on ribs It's also great with alfredo and cream sauces, and creamy pan gravies
