I'm making a big ass pot of bolognese but I'm getting pretty tired and want to go to bed. it still has another half hour before it's done in the oven. can I throw the whole pot into the fridge and go to bed, or am I going to excessively expose the sauce, or the rest of my fridge, to dangerous temperatures?
ps fuck having to wait 5 minutes to post a thread fuck you

Bring it back to a simmer then turn it off and in the morning, bring it back to a simmer before cooling it.

i mean if you wanna get technical according to food safety standards you should let it cool first, realistically it's probably not actually going to get you sick or anything, but it could. really your judgement call here dude.
personally i'd pull it out and let it cool for like half an hour at least, surely you can afford to stay up a little later or you wouldn't have started cooking fucking bolognese.

Do you never wake up to use the bathroom overnight? If so just toss it in then. If not and you want to make yourself wake up partway then chug a glass of warm water or milk before going to sleep

i might just do this, cool it a half hour and get a little less sleep tonight. don't want to die

it's too hot for your fridge. it won't be dangerous to the food but it would be excessive on the machine and hot to the material upon which the pot rests. just let it sit overnight on the stove, it won't go bad. you can begin the cooking process again tomorrow. there you go. always use discretion. stir as much as you can and check for safety with your eyes, nose, and mouth. good luck.

if you take this path, you also have to make sure your girlfriend isn't afraid of old food and can trust your judgement. better yet if she can trust her own.

What is with this new bullshit about how putting food in the fridge hot makes everything go bad and also is even claimed to make the food itself "stay in the danger zone longer!"

How the FUCK is it staying warmer LONGER when it's in a fucking FRIDGE no matter how much hotter it makes it? They completely made this new shit up only the past few years about food safety stating you need to let food sit out for fucking ever - you know in the 'danger zone' - on your goddamn counter.

Wouldn't put it in there in the pot though, at least put it in a container of some kind or you'll probably fuck up the fridge under where you put it.

You're a special sort of stupid aren't you? Think for a few seconds about what happens to the ambient temps in the fridge after putting a pot of boiling Bolognese in there, how long these effects might last, and what affects this might have on the other stuff in the fridge during this time.

>> No.20205203

op here, I got impatient so I made an ice bath and set the pot in it for about 15 minutes, took it out and the sides were cool to the touch so I threw it in the fridge. still there and I'm at work, will update tonight on whether it kills us

Turn the heat off, set a very loud alarm, and take a small nap. I do it all the time. The residual heat will keep it cooking while resting in the oven. It will eventually cool down and be fridge ready. Then your alarm goes off, you get up, put it in the fridge, and go back to sleep.
