I have been making my own mayo for over fours years, haven't bought any mayo in that time
it IS so much better and whenI try to explain that to my friends who aren't as into food and cooking they go "yeah, I guess so, but the store bought is easy"
I started using whole grain Dijon a couple of years back and it looks really nice
I make a quart at a time and use it within a couple of months. For one batch I use five egg yolks
I use it in salad dressings and it's such a powerful emulsification that it's easy to make emulsified salad dressings without breaking it

But as I don't just want to post post wall geriatrics... here is my top culinary institute of America chef inspired mayonnaise recipe.

2 pasteurized egg yolks
2 Tbsp white wine vinegar
2 Tbsp water
1 tsp Dijon mustard
1 1/2 cups canola oil
1/2 tsp salt
1/4 tsp ground black pepper
2 tsp lemon juice

Add all ingredients together and slowly pour the canola in and whisk until the correct consistency.
