In a restaurant I usually order rare or medium rare. When I cook at home I sometimes do a filet mignon at blue rare if it is at room temperature before searing and I let it rest. I think rare tastes the best IMHO. I've always wanted to try steak tar tar, but I will never make it in America because we have terrible food regulation.

I don't care, I just cook it until there's a nice crust on the outside on high-medium heat. I don't care what color it is on the inside, I let it rest in aluminum foil so it can stay hot. I never crave steak anyway though.
