Catfish sandwich. Fish is fried in cornmeal after a buttermilk bath, add mustard, hot sauce, pickles and onions, on plain white bread. It may sound a bit slipshod but it's really fantastic, easily the best sandwich.

Here's where it comes from. There are two main factors.

1. Business interactions: cashiers, clerks, attendants, and various (non-tipping) service people. On the east coast you're highly likely to encounter sullen immigrant and other minority ESLs or even sometimes poor whites who seem to hate life and barely make eye contact. Alternately in higher-end stores you get stiff and formal old gay dudes or airhead thots who can be rude. Meanwhile in the midwest you're more likely to encounter a genuinely cheerful person who smiles and is friendly and helpful during any random transaction.

2. Street interaction: People walk around east coast cities like you don't exist. They ignore you and expect you to take care of yourself. No holding doors, no greeting or nodding to each other on the street, nothing. This is quite rational behavior in the dense city environments because there are so many people in close proximity that constantly greeting and acknowledging everyone would quickly become exhausting. This mentality bleeds into suburbs and busy villages nearby, and there can be times when the mind-your-own business mentality crosses the line into rudeness. Ever been run over and squawked at by a Jewish Yenta in a supermarket? In the midwest people are just generally more courteous, friendly and open during public interactions.
