WTF? Mackerel/Saba is the most hated fish in Japan for sashimi? I never saw that coming... It's tactually the best one with probably the most robust flavor of any of them. Is this like a social class thing because it's a cheaper fish?

I've seen chefs say its the best one. Explain please, i find these results really bizarre, especially with Uni being so high proving they didn't just poll uncultured normies...

>> No.20177720

That is suprising as fuck. Saba is easily my favourite fish-based sashimi

>> No.20177724

The taste is waaay too fishy.

>> No.20177726

Fresh mackerel has a very strong flavour many people find challenging. It's also one of the cheaper fish so it lacks the prestige associated with costlier ones. Those would be my guesses as to why people aren't placing it higher on their of top sushi fish.

No one eats it fresh. They have parasites. its cured in vinegar. and it tastes awesome, but apparently ppl hate it.
i saw a poll of sushi chefs and a lot of them had it as their favorite. so this really is bizarre to me.

Never heard the meme that Chinese eat anything alive?
Pretty sure they ate a endagered species of turtle into extinction. So I wouldn't put it above them to eat eels into exinction.

Yeah and the giant salamanders live in the CONUS as their natural habitat. They are discretely harvested and shipped abroad where they fetch eye watering sums.

Some guy did a mini doc on them and he had to not disclose where this particular habitat was located.

When I went to Japan I remember eating sushi and being slightly disappointed how subtle the taste was. It was so fresh, it hardly tasted like "fish".

I'm from the Midwest btw.

mackerel in japan is seen as something you grill, roast or marinade & simmer in autumn, not really a sushi fish.

The type and origin of mackerel used for sushi changes with the seasons
The quality and price of the fish varies widely.
The meat has a unique flavor and is seasoned with salt and vinegar, which some people like and others dislike.
Low quality mackerel prepared by a poor chef tastes very bad.
