Using a mixture of fresh salad veg - lettuce, tomato, cucumber, onion etc with grilled vegies like eggplant or marinated veg like artichokes and peppers, sundried tomatoes makes for a god tier sammich. I use the 'anti-pasti' veg which has been grilled and/or marinated as layers to go with whatever else I am putting in there.

Also hummus and some chilli/hot sauce, smear som of that on the bottom piece elevates it to a whole other level of mouth-fucking your sammich.
Avocado mashed instead of butter also works.

Mix curry powder into hummus. Spread on tortilla wrap. Load with shredded carrots, cabbage, onions, bell peppers, baby spinach. Sprinkle of salt and squeeze of lemon.

Other day I had no energy to make anything to eat except a sandwich but I had nothing in so I made it with slices of raw broccoli stalk. Perfectly edible and enjoyable.
