Dry sand retains heat very well.

Source: used to haul buckets of river sand to my hobo camp, poured them on cleared ground and put a couple sheets over it.

Sand conducts and holds heat.
There's already water and ground coffee already inside it. What you are seeing is the coffee foam up because the sand is so hot and conducts that heat to the coffee very fast.

The sand supposedly makes the heat more even and depending on the depth of sand, adjusts the temperature.

what i always think about these turkish ice cream men. they are really lucky they don't face a lot of aggressive people. this is a very specific example. but lets say, you did a gram of mdma in the weekend, it's Tuesday, your serotonin is an all time low. you even take more stimulants such as amphetamine or cocaine that day which makes your condition far worse. you're extremely easily triggered and could get very violent very easily. this ice cream guy plays tricks on you. you feel more and more anger. you pull the long metal spoon from his hands and bash his head over and over until he's nearly dead. him ending up in the hospital and you without the ice cream you've paid for. that would suck..
