I'm not making my own sausages, but soak some beenz, and defrost the poultry parts overnight, quickly brown up some sausages and mirepoix in the pan with some butter or some kind of shmalz, add beans and stock, some clove, bay leaves, a fistful of salt, some white pepper, and a pinch of nutmeg, Pat the bird bits dry, salt, (white) pepper, pop on top, 450F til the skin browns, stir, drop the temp to 350F and give it another 90 mins or so... takes some time, but you're looking at like 5 mins of chopping, including hacking up the bird, and maybe 10 mins tops of active cooking (as in you have to be in the kitchen) if you use a timer.

It's not supposed to be fancy - it's meat and beans.

My mom makes a really good white bean hummus with lotsa garlic, parsley, tahini, olive oil, etc. A couple months ago she did it with butter beans and it was awesome, even creamier than normal. We had a big batch of it and besides just dipping sliced veggies and pita chips in it, I was putting it on sandwiches and in wraps for the whole week. We froze the rest of it and thawed it out for Christmas with the cousins n kids, and they finished the last quart & a half of it. I would highly recommend it!

What elevation are you at? If 5,000+ feet you have to start adjusting. Helps to have a pressure cooker but those are also effected. I normally do a 1 for 1 jasmine rice to cup of water in my instapot lately. For beans I normally slow cook them at least 2 cups of water to 1 of beans and cook them longer to get rid of water if needed.
