The buttermilk chicken sandwich was surprisingly tasty to be honest, way better than I'd expect from McDonald's. They replaced it with that "crispy chicken sandwich" that they brine in pickle juice. Personally I can't stand the taste of pickles so this was a huge downgrade to me.
But I didn't really need to be eating McDonald's anyway, so I guess it's a bit of a blessing in disguise that they no longer have the buttermilk sandwich.

It was such a good value, 1 dollar for a burrito with plenty of meat and carbs that's sure to fill you up for a while. Same thing with the beefy potato burrito which they also removed from their menu, but you can get that one custom since they still have the potatoes. The Fritos burrito you can't get at all anymore.

No it isn't, you've got that totally backwards. Fast food places actually used to use tallow because it's the cheapest option.
They switched away from tallow because of the nutritional "science" pushed by Crisco and other companies that said animal fat was worse for you than seed oils. They wouldn't have been able to use seed oils early on since tallow is cheaper, but since these fast food companies have gotten even bigger and bigger they can afford to fry in seed oils instead now.

more than likely, he basically cut the menu in half because he wanted everything to have the same 5 ingredients so that Taco Bell could be opened as a small form factor "food kiosk" which never really ended up happening since there was so much backlash over the menu cuts.
They even got rid of the iconic mexican pizzas (they've since brought them back but still no fucking frito or shredded chicken burritos).
you're right the frito burrito is a good value because the chicken one was 2 dollars. I enjoyed both.

I haven't eaten fast food regularly ever in my life but, like, 15 years ago, McDonald's had this chipotle barbecue sauce that was the absolute kitty's titties.
idk when they stopped carrying it but the last time I went to McDo was before my son was born so 6+ years ago and there was no chipotle barbecue sauce.

The greatest of them all, the mythical Grande Soft Taco. It was a soft taco with double beef and no lettuce, wrapped in another soft taco with melted queso between the two layers. It was two dollars, I ate three of them every day after school and I don't regret a single bite.
It was so simple, so elegant, such a perfect blend of ingredients, a comfortable form factor and an excellent value. The day they discontinued it was the last day I ever went to a Taco Bell. I could've put multiple generations through college by now if they had kept making this simple item, but no, in their hubris they thought they could improve or innovate upon perfection. Fools they were, their only accomplishment was making the world just a little bit worse.

They got rid of it last year in America and replaced it with a grilled chicken wrap. Also to note, the grilled chicken for the sandwich was cooked onsite while the grilled chicken for the wrap arrives pre-cooked with grill marks similar to their chicken salads.

If you have a nearby wholesale butcher that actually breaks down carcasses (opposed to "butchers" that are just a deli counter that sell things from wholesale butchers) you can probably get tallow for free or for pennies because they usually throw it away to be incinerated as a waste product, same with beef bones. You will probably have to buy some meat from them first though and ask for tallow or bones and they'll probably throw it in for free.
The only negative thing is that rendering it takes a while and you have to keep skimming it. You only need a decent sized chunk as well, you get a surprisingly large amount of liquid tallow. A chunk of fat the size of a stick of butter is enough to shallow-fry 1kg of potatoes IME.
