Measurements are American, there's converters online if you need them.

- 8 oz butter, softened
- 4 oz white sugar
- 4 oz brown sugar
Cream it all together in a mixing bowl until consistent
- 1 egg
Mix egg into sugar butter
- 0.5 tsp baking soda mixed with 1 tsp warm water
- 1 tsp vanilla
- 0.25 tsp salt
Mix the above into sugary egg butter
- 12 oz flour
- Chocolate chips as desired
Mix a little bit at a time until everything's in there. Set oven to 375 Fahrenheit and bake cookies for 10 minutes. Everyone at work loves it when I make cookies.

Ultimately, I found the six most important points in CC cookie making are:
1. Using a mix of cake/bread flour over AP flour (more cake = more tender cookie, more bread = chewy)
2. Browning the butter then letting it re-solidify before creaming it with the eggs/sugar
3. Chill the dough at least 24 hours in advance
4. Use the best quality chocolate you can reasonably buy and a mix of dark/semisweet/milk (and maybe some white too)
5. Add a tsb or 2 of instant coffee/espresso powder to the dough during the creaming stage, it won't taste coffee-ish but will set off the chocolate flavor of the chips
6. Form the dough balls into vertical cylindrical tubes on the cookie sheet and as they bake they'll flatten down into circular domes without spreading too much into thin discs

Since this is cookies we're talking about, and not cake or bread you don't have to be so anal about flour brands.
King Arthur is the most consistently milled-by-spec product in most grocery stores but both their AP & Bread flours are much higher protein % than average, meaning, they will develop gluten quicker and can create a tougher cookie more easily if the dough is accidentally overmixed. I personally use a sack of Gold Medal bread flour that I bought when it was on sale and I cut it with either Swan's Down or Pillsbury Softasilk cake flour (whichever is cheapest at the time).
