Using a scale allows you to accurately and easily experiment with adjusting dose and ratios to achieve different results, and then repeat once you've determined what you like.

No it isn't, eyeballing is very very easy. I am NTA but I belong to the vast majority of coffee drinkers who don't use a scale. Its easier to not use a scale because by not using a scale i don't have to pull the scale out or tare it. I also don't eyeball it for 30gr, just for looking like the right amount.
I also use pre-ground Lavazza for $6.49/tin. It tastes great and i highly recommend it. I keep a tin of regular and a tin of decaf and switch to decaf about 3pm most days. I tried Ille once, it was almost twice as expensive and didn't taste any better...

This isn't relevant to coffee but you'd be surprised how accurately some people can judge weight. I do a lot of baking and if I'm eg splitting dough into 24 buns, I do use a scale, and by like the third bun I can pull it off very very accurately, like within 1%.

It's easier when you have a consistent reference. If you're using the same beans and same scoop all the time, you just need to weigh a couple of times to know what you should be looking for, then you can probably eyeball it fairly consistently afterwards. Changing the beans or your scoop will probably throw you off more than you think, however.

So you can either dial in a new bean by trying to figure out the perfect weight, then tie yourself to always measuring for that weight. Keep your water level low and steady. Inch, inch and a half above your coffee. It'll keep your slurry temp higher and help avoid some bypass. You want your water going through the coffee, not around it. Swirling the shit out of the bed early only really helps the shittiest of grinders to remove fines from the slurry and trap them high on your filter. Gently agitate/stir/swirl early on to make sure theres no dry pockets.

Eureka grinders in general are pretty legit, good build quality and very easily serviced/repaired/cleaned.

Unless you really really need the sound dampening the silenzio includes though, you can save a couple hunnit dollarydoos by getting the filtro and if you want espresso focused burrs you can grab em for $30 and do the swap yourself

All the 50mm mignon grinders are functionally identical other than which burrs they come with for a couple and which switch type it has. The filtro push button kind of sucks but you can swap it with a standard toggle switch that costs like $0.50 and it takes like 10 seconds.

I just brewed for the first time this 90/10 Mokaflor Farm blend by Caffelab/Mokaflor and WOW it’s just good as the outside box looks.

Plenty sweetness and good body, it’s a medium roast so you can feel the layers of flavour which include: chocolate (a lot), biscuit and malt.

When I brew 100% arabica I tend to stay in the 1.5.X range on my grinder and 1.8.X for 100% robusta, both medium roast base samples (dark roasts would be on the coarser side because they extract more easily), so for this one I chose an in between setting which is 1.6.2 and I could stop here for how good it tastes.

A very little hint of acidity at the beginning which gets instantly neutralized by lots of sweetness and chokky notes for the Brazilian arabica, then it’s Colombia time with malt and biscuit, there’s probably caramel too, all while the robusta stays silent in the background giving us body and toasted notes.

Bros 90/10 is good if you want to boost the body, but 80/20 is where it’s at for Italian blends (I should also try 70/30). Also dark roast.

This would be a perfect coffee for a future liquor, maybe I can even try making some with the leftover alcohol. Hmm.

For a lot of people it's probably at least somewhat just name recognition and pedigree. The fact that Rancilio has been around for so long and has been producing for example the silvia for over 25 years is appealing to a lot of people whereas Profitec is a relatively young face in the espresso game and the Go is a very recent offering that some might be hesitant to throw their money into without seeing how it holds up and performs 10 years down the road. Espresso is one of those hobbies where people really like to hedge their bets on known quantities unless they're the "new thing shiny" compulsive spending type.

For my money I'm a cheap bastard who likes to tinker with shit, so I'll stick with my GCP and work on modding it into a ghetto Decent sometime down the road. And that's a pretty good representation of my first point when you really think about it, Gaggia has been around and making the classic forever, and everyone knows it's far from the best machine you can get but people keep buying and recommending it because it's been around forever so people know all its quirks and how to deal with them, Gaggia has actually made efforts to iterate on the design and improve it over the years (aside from the V2 dark ages), and there's a huge community of people working to mod and improve the thing with tons of info available for people looking to do the same.

Does it make sense for people to have a bias toward more established machines over something like the Profitec Go at this point? Probably not, but it's not all that surprising.

Yeah that's what I am doing too. GCP [evo] + gagguiuno. That's why I said $500-1000 range to exclude the Gaggia, which is $350-450 nowadays. When you're spending just under a grand, I think that the Rancilio Silvia is missing a lot of features that should be standard at that price range (especially PID).

Dunno about the brand specifically, but Viet coffees tend to be mostly very dark-roasted robusta, which makes them strong and bitter. They sometimes upset my digestion and I'm not a fan of darker roasts, so I only have them on occasion and only with condensed milk. It's really tasty that way, but also too much sugar for a daily drink (at least for me).
I like the phin filter as a brewing method, though, it's dead simple and doesn't need any consumables.

staleness would depend entirely on how long from when they roast to when they ship and how long they take to get to you. If the shipping isn't insanely long and you buy from a halfway decent roaster you should get them with plenty of time to use them before they go stale. Damage is insanely unlikely unless they're packed in a very retarded way, they're coffee beans, they're not that fragile.
