I've got a giant leftover ham bone what are some things I can make with it that aren't split pea soup?

Bean or lentil soup.
Remove the meat when it cleaves from the bone and fry in some butter before returning to the soup.
Finish with parsley.
Done.

looks like still a lot of meat on that bone

If your picture is the bone in question you can scrape the meat and use it for sandwiches or use as it for stir wok recipes, as toping for homemade pizza or as meat for taco/burrito filling, the leftover skin can be deep fried to make rinds, probably a bit chewy but edible.

Once the bone is picked clean you can make soup by tossing some 3 carrots, a big stalk of celery, an onion and a leek then use the broth to cook pasta and make soup.

Take hambone throw it in a slow cooker with enough water to coveron high for 2 hours. Throw veggies in (ive recently had radish in mine and it was great) cook for 6 more hours. Shread/chop the meat. Throw some oregano or something in if you want more seasoning. Shit was baller and it lasted a weekend plus a few days. Used leftover broth to make some flavored rice. Not every meal needs a true recipe.
