Beer dough, extra cheese and pepperoni.

Used Adam Raguseua's NYC2 and substituted the water with a pint of lager. Crust is very light and crisp, like a croissant almost, or Pat's Pizza of Maine.

i recently cut the amount of cheese i use in half and my pizzas are a lot better.
Also lowered the hydration to 65%
