What do you mean, why? Why jelly with meat? Jelly and jam is great for a lot of dishes, cranberry sauce, apple butter, apricot preservers etc. If you mean why mint as a flavor, mint gets used like other herbs in a lot of dishes. If you mean why mint in jelly form particularly...I don't know, maybe a left over from needing to preserve herbs year round.
