yea homemade mayo kicks ass
you should try it out with various other fats, i like it with the fat that renders from slow roasted pork
you can also try hollandaises and other warm emulsions
immersion blenders are great for smooth soups

Keep making mayo but with a goofy twist each time. Add some curry powder then dilute and you get your average kebab store curry sauce. I really like it
