It was built after the civil war in the North, in all likelihood there were a handful of wealthy blacks of the era who likely would've been welcome to stay/dine there.

For lunch? Clear green turtle soup. I'll start with some russian caviar canapés while I wait. Where is the drink menu?

For dinner. Sweetbreads parisienne with a side of string beans. Where is the drink menu?

Back before mass standardization and global shipping there were a lot more regions known for a lot more things. Knowledge didn't spread as easily so if chefs in Baltimore were doing something weird it was probably just them doing it and they'd become known for it.

No. The truth is that caviar is shit. People think that something expensive most be good. It's one of that people buy as a way of showing off their wealth.

those prices are stupid, if you want to try it buy just buy some premium stuff from a caviar company directly.

Why blow $220 at a restaurant when you can blow $80 and get roughly the same shit, or $200-300 and get MUCH better shit than what they're serving at the restaurant.

It isn’t. You can get good caviar for far less. An ounce of good caviar should be between $30-$100 depending on the fish and country of origin. American paddlefish caviar is affordable and a good place to see if you enjoy it. It used to be sold at Trader Joe’s but they stopped selling it for some reason. If there is a good, middle class wine store such as a BevMo! or Total Wine near you they’ll usually have a small selection to look at.

Shit like $220 caviar and $50 cocktails are marketed towards nouveau riche dummies or businessmen with expense accounts.
