I make sushi at home and spend a fraction of the money. I make spicy tuna and tuna nigiri. Philly roll. California roll. Crunchy shrimp roll and maybe yellowtail. Simple as. Fresh water must be cooked that’s why salmon sushi used to be so taboo but Norway marketed their farm raised salmon well enough to shift the Japanese palate and the rest of the world followed. Tuna gives you mercury poisoning. Salmon isn't Japanese, salmon sashimi was unknown before the 1980s because of the parasites. The modern seaweed farm industry is based on the work of a British woman scientist (look up "Mother of the Sea"). Your local sushi joint is Korean (possibly with Mexican BOH). No, no they don't. They are going to use cheap farmed fish, and it will be low grade fish. It will taste worse than any dedicated sushi place, including conveyor sushi. But it will be cheap! Also it will be restricted to certain types for the buffet to save money. You definitely will not be getting any fancy or fatty cuts, and I have yet to see bbqed eel on any buffet line.

overhyped meme food that is usually made by mexicans or koreans, or both, because it has a high mark-up. the only real way to have good sushi is to get it from a jap-owned place or to enjoy it in japan. other than that, you can easily combine your favorite fish and rice using a onigiri mold (raw or cooked). sushi is mostly popular due to the presentation and taste, one of which you can replicate as long as you have a good seafood source. if you live in the midwest you can still make decent tuna + rice with onigiri mold and it will have that creamy salty taste. at my local jap store they charge about $2 for a tiny little riceball wrapped in seaweed. and if i don't get in a long while i forget how to open it properly. it really makes me mad and of course it's my fault. but i bought a press recently so i will be making my own for much lower cost even though 2 bucks per rice ball is OK, it's just there's not enough fish or roe inside.

Yeah, I grew up with an amazing Japanese restaurant near me. They were too successful with their American dream and sent both of their sons and daughter through college, so none of their kids had any interest in taking it over or doing anything in the restaurant industry. The elder son owns a computer consulting company and makes bank while the younger son and daughter are both in the medical field.
The dad who was an amazing taisho ended up selling the place to some Vietnamese and the quality went down.
Now it’s just above the level of Hmart sushi, but still way better than the average supermarket.

The old Japanese taisho/owner was a true artist with a knife, and a stickler for detail so it was an experience just sitting at the izakaya and watching him do his magic to the meal you were about to enjoy.
