If I'm feeling very lazy I'll put whatever frozen chicken or pork I have in the instantpot then shred it. Sear shredded meat on a skillet, then build the taco on top the meat. Let the tortilla steam on top of the meat for a minute then pick it all up with a spatula, hot sandwich shop style. I'll grill chicken to do this too but then I'd have to defrost, which I don't have to do in the pressure cooker.
