It's 4 thumb screws and a bolt. Wug2 can run 71mm cones, 80mm flats(2 hole and blind), 83 flats,83 cones(probably including the Aries). Duo doesn't do cones or 80mm, Aries doesn't do any flats or 71mm cone. Why would you want to put worse cones in the Aries anyway?

And you'll still have the same 83mm grinder. You get how being able to run multiple sizes and types of burrs is a very different thing right. Changing the burrs in a mazzer zm still makes it a mazzer zm. Changing a wug from 71mm robur cones to 80mm dittings makes an entirely different grinder.

The aries cone drops out for cleaning, not for swapping. If you wanted to remove, disassemble and reassemble the carriers after dropping out the lower burr you probably can. Months to years. Freezing essentially stops any degassing dead in its tracks so make sure they're sufficiently rested and you're good to go. After that depends on your storage. Vac sealed will keep better than a taped over valve. You don't want any extra moisture working its way into the bag. Frozen green coffee keeps nearly indefinitely.

Dark roasts degas(and spoil) fast. Light roasts degas(and spoil) slow. Oily beans are coated in plant fats. Plant fats oxidize and skunk up, so drink dark roasts "fresh"(er) off roast. Lighter roasts don't have that issue so you can wait for that CO2 to release. CO2 doesn't taste great. You want to freeze beans at their peak. Freeze too early and they won't reach that peak after unfreezing. Freeze too late and you're stuck with stale beans. Their "peak" varies based on the rate of offgas. Its all preference though. I wait 3-4 weeks to drink or freeze my roasts.

Anytime, glad to help. Not the first time I've had to type it out lol. I should probably just save these replies and save myself some work next time. Offgassing is a variable you can't really control so you just have to work around it. If your beans are continuously changing from day to day its harder to brew consistently. So you wait for that offgassing to taper off. Waiting lets oxygen do what it does, oxidize things. So you keep your beans in a valved bag. Lets gas out of the bag while keeping fresh oxygen from getting in. The roasting/brewing competition guys will compete with fresh coffee, but they'll grind a day or two before they compete to let that offgassing happen way quicker. Doesn't really work for home brewers because you're trying to extend the usable period of your beans. So people buy airscapes/single dose tubes etc etc. Theres a big difference between a month old bag you've been getting into daily and month old doses that have been sealed the entire time.

Get your beans in, roast them, let them off-gas a bit, and then sell them within a week grinding them only as necessary.
If they are less fresh at the end of the week, that's on the customers who were too stupid to come in sooner.

I have one that I sometimes take when I travel for work. Bottom line up front, it works - if you've got a decent hand grinder and you can manage water temperature, you can absolutely make espresso with it and it's not bad. It's going to take a lot longer between shots than a home machine, and getting all the components and the internals dry can be a little bit of fucking around, if you're going to be packing it and forgetting about it. it's not at all comparable. percolators are a borderline dead tech for a reason, you're being the hipster using something that went out of style 50-70 years ago because it uses un-sound principles to brew coffee. percolators boil the water after extraction, this burns the water, this produces a pretty much universally considered negative taste. instant coffee (aside from select specialty options) extracts about twice as much as other methods of brewing, this makes it woodier, more astringent and fibrous, it's horrifically overextracted and just tastes of less to save costs(most of what is extracted has no taste and is just filler, like cardboard), almost everyone including the people that use it consider it inferior. if you like boiled coffee and woody earthy coffee, that's fine, but don't act like the 99.9% of people that feel otherwise are the IPA micro brewery hipsters, you're the weird "look at me I'm so special" person in this scenario. why not just get a normal drip coffee machine? it'll be a thousand times better than a percolator
