Yes, you are correct. A bagel should never be eaten as a sandwich. They're meant to be cut in half and eaten as two halves with toppings. Trying to turn them into a sandwich is a fundamental misunderstanding of how bagels work. That said, a good bagel with cream cheese and lox, etc., is one of the top 10 foods in existence. It's also on of the worst bagel toppings you could possibly choose to turn into a sandwich.

I think einkorn is what wheat is descendent from and that's European although wheat later grew freely across Asia, the Levant, and North Africa
