America has a lot of varied ancestry and dishes are often tied to the land. I once lived in a place where rice was first sucessfully cultivated at scale in the US and it was unheard of to have a gravy dish without rice. Probably due to successful marketing 100 years ago, but still. And the gravy being thick came from the german and english cultures that once formed the idea of american cuisine. I personally think it all tastes good, thick or thin, rice or potato. Beef tips and rice are great.
