They don't. Pears start off made of glass. Over time, they shed their outer skin, which becomes what we think of as a bottle. The remaining core of the pear pulls moisture from the tree, which it sheds into the "bottle", making the "pear" shrink. The pear juice ferments into alcohol. All the farmer has to do is come by, cut the stem and put in a stopper.
