I gotta buncha fuckin spinach that's about to go bad and want some ideas on how to use ALL of it. I mean like 3/4 of a Costco box of spinach. I am about to just throw em in a pan with some oil and garlic and call it good but want to get /ck/'s ideas

yea just wilt it in a pan and put it into some blocks and freeze it like ice cubes if you have a ton of it

Spinach reduces to like an eighth of its size when you pan wilt it you don't have that much spinach

like others have said earlier, creamed spinach is the way to go here. saute and wilt in butter, add cream once substantially wilted, simmer until thickened, add salt and a lot of black pepper and you're good to go

puree it all and make a fuck ton of saag

This but I wouldn't recommend freezing, and use shallots instead of onions. It's a classical dish. Also I have no idea what size a costco box is but using this technique means a very little amount of spinach when you're done. If I find my recipe later I'll post the name or full thing.
