Usually take a turkey and swiss with lettuce, onion and banana peppers and whatever different mustards I have on sourdough.

Banana peppers is a good move. Consider getting jarred roasted red peppers, they go great with turkey.

Chicken pesto is incredible. One of the absolute best sandwiches is grilled chicken, pesto, garlic aioli, mozzarella, roasted red peppers, and arugula on a fresh baked focaccia.
