What's the difference between a pork steak and a pork chop? All I know which part of the animal comes from is ham, loin, bacon, ears, and trotters.

Usually what gets sold in the US as a pork chop is cut from the loin, either with or without the bone. Pork steak is from other areas - shoulder, sirloin, ham, the like. Usually they're bone in, and often have more fat and/or connective tissue, so they're considered less desirable and cheaper. At my local Butera, on the occasions when they have variety pack pork chops on sale for cheap (less common now than 3+ years ago) most of the 6-7 pieces in the package are what would otherwise be sold as pork steaks.
