I tried tamarind pods before, They are annoying with all the seeds and fibers.
For pure tamarind there might be picrel in the freezer section.

You can pull them all out in one go like the spine from a cooked sardine.
As for the seeds, they're also not too big a deal to me, but if they are to you, there's no changing that.

Do Mexicans even have sweet tamarind, now that I think of it? I never see them just eat tamarind as-is so I just concluded that they simply don't have it available and guessed that the frozen pulp would all be the sour stuff.
Little makes me happier that cracking open a sweet tamarind and feasting on the goo inside.

I prefer the sour, adding sweetner to sour tamarind is good, its like lemonade but different. Sweet tamarind tastes like bland raisins to me.

I think they taste like less cloying dates.
In fact, tamarind is from the Arabic "Tamar Indi" meaning 'Indian date."
I like dates okay, but sweet tamarind is my shit.
And yeah, sour tamarind is great. I use it to make burmese tamarind curry, for making Thai smoked fish and tamarind soup and for making tamarind-ade. For dinner reason, though, tamarind reacts badly with seltzer when I make the ade into a sweetened concentrate for soda >>19823669. It tastes metallic and the weirdest thing of all is that the bubbles from the carbonated water take on a bizarrely blueish hue and inexplicably maintain their structure more readily than they do with my sparkling lemonade, limeade or other soda flavours I make.
