Corn syrup is cheap as hell and allows one to get more out of a batch.

You are paying for the name. You think an iphone has $2000 worth of components in it? You are paying for the name. Chances are both those sauces were made in the same factory with the same common ingredients.

The name brand was made by hot sauce professionals while the generic was bottled by barefoot Chinese slaves.

Why don't the off brands just use fewer ingredients like the name brands?

No hot sauce uses corn syrup, you donut. Post one.

real answer, many of the more popular hot sauces use a blend of peppers including red jalapeños and that's what gives it a red orange color, but there is an issue in the supply chain right now where farmers have stopped growing them for a few seasons due to severe droughts and so these peppers are harder to come by and have to be imported from Mexico mostly, so the off brand doesn't give a shit about what peppers they use they just add the red 40 to trick you into thinking its the same thing.

Who fortifies hot sauce with vitamin B12? Red 40 is the only additive on your list I can find in select hot sauces. There are gums, excessive salt, and benzoate of soda that call for caution though.
