Fill a large bucket to the very top with tacos and onions and top it off with extremely hot oil and let it sit in the hot oil covered for like an hour. Extremely u healthy but delicious

Then why would you need to leave it sitting for an hour? It just doesn't make any sense. Once the oil drops in temperature to close to the boiling point of water the tacos are going to start absorbing the oil, which should happen so quickly it would be about the equivalent of flash frying them. But if they're stacked in a big bucket then the ones on the bottom are going to be sitting in oil for longer than the ones on top. And even after an hour it's not like the oil is going to have absorbed any flavor from the onions. It sounds like you're just eating slightly crispy, luke-warm tacos dripping in flavorless peanut oil.

make a chili sauce with lots of oil, dried chiles, sliced garlic, and chunks of onions
blend it until smooth
take a fat stack of corn tortillas, warm them in the microwave
fill them with chorizo or the meat of your choice
line a basket with plastic, put half the tacos in, pour half the chile sauce on top, add the other half, pour the rest of the sauce on, fold the plastic over to cover, and I guess then you are supposed to take it to a picnic
