it's the opposite actually. good 3-ply (or 7-ply) stainless steel pans have the most even heat distribution, it's not something cast iron can match no matter how expensive it is.
heat retention is where cast iron shines because those things are built like tanks while most stainless steel pans are 'only' about 3mm thick. from what I know there is only one exception with the demeyere proline that is over 5mm thick so it combines all benefits of cast iron except for the seasoned non stick surface but you can still make perfect sauces obviously

Neither is true. Lodge cast iron cookware is quite cheap and will do just fine. A skillet costs around 15$ to $20. Cleaning is also not a big deal, assuming you didn't burn the food on. Just soak for a bit in hot soapy water, scrub, then dry on the stove and wipe with a layer of oil.

Make your own ghee, two pounds unsalted butter yields two pints ghee. Use ghee for cooking, sure, but it is the best substance for curing/seasoning non--enameled cast iron bar none.

My 8qt enamel coated dutch ovens are my go-to's for everything except dutch baby treats, crisped potaoes, omlets, searing and bacon.

Perfect bacon every time in a cast iron skillet: cold oven and skillet, dump bacon and separate, install filled skillet, turn heat to 375F, check through glass after 20 min. until you see/smell *your* preferred perfect bacon. Perfect always.

not true but a seasoned pan (even just the factory seasoning) can be cleaned with no ill effects as long as you don't literally soak it overnight or wash in the dishwasher which you aren't supposed to do with non-stick either.

I guess they have more upkeep AFTER you clean them but none of it is hard to do. Just clean it, let it air dry upside down and then thin coat with oil. But you only have to do all that if you don't cook with it regularly. If you're using the fucking thing every day it's not as important to do the reoiling.

Using it regularly, a cast iron and/or carbon steel (I have one of each) is just as if not more nonstick than a teflon pan, requires next to no effort to clean, and less than two minutes to reseason afterwards.
