It’s all preference you’re right on extraction but even then lighter roasts have much more caffeine in them that’s going to make more of noticeable difference but the goal should be a tasty and effective brew too hot too bitter but cold brew actually has the maximum amount of caffeine because when you heat water you speed of up the molecules themselves which means the solution cannot hold as much similar to how hot air / cold air works. Crema out of my moka pot this afternoon. "100% Columbian" beans from Zavida roasters, bought from Costco. No roast date listed, best before July 2024 so maybe roasted July 2022, I don't know. 6 cup Bialetti Venus, 29g coffee, paper filter below the grounds on the bottom of the funnel and another paper filter above the grounds on the filtration disk. Boiling water up to the valve and brewed on the lowest flame on small burner. 170g out before it started sputtering. Crema dissipated within a couple minutes after cooling the pot. Drank with 1 teaspoon of unrefined cane sugar and around 30g of warm milk. This was my fifth or sixth time brewing coffee in the moka pot and first time getting any amount of "crema".

Someone needs to do a direct comparison. Between light medium and dark roast beans. Buy green coffee. Roast them to three different levels using the same roaster on the same day. Brew them all using the same method, the same grind, the same weight of coffee, the same weight of water and the same water temperature, and test for caffeine. Do this multiple times to collect as much data as possible. I suggest immersion brewing to take out as much variables due to inconsistencies in other brew methods.

The thing with blade grinders is you can't control for grind size. With burr grinders the coffee particles drop through the burrs into the collection chamber once they've been ground smaller than the gap between the burrs. With blade grinders the small particles are continuously ground as you try to grind the few big chunks that remain. You can try to mitigate this by grinding in multiple smaller batches, pulsing it on and off, and shaking the grinder between pulses.

Nope. Couple years ago some people realized you could push higher extraction % by sticking a cut aeropress filter in your basket. Turns out when you keep all your exit holes from getting clogged with an expanding coffee puck you get less channeling, a more even extraction, and the shot flows a bit faster. why? well because james hoffmann did a series on the moka and used bialetti the whole series
wired gourmet also used bialetti and didnt have these problems
mainly because they knew how to use this machine and they were using fresh beans that were freshly ground for each brew

the ethiopian was hard to dial in
it was consistently fine, the whole bag there was nothing i could really complain about, but it never really had any distinct identity i guess
and im on the Guatemalan right now which is overall more interesting but again dialing in is tough
i started pretty fine and im working my way coarser, todays brew was too fast i think, so i will adjust 1 click finer and try again.

i think it said grade 1(?) on the site so i dont know how many defects that allows for, i have seen 3 so far.
but i dont really have an eye for what is what. like what is just damage from being moved around and what might be something like bug bites.
its anaerobic natural so idk maybe that changes how they look.

do your beans come vacuum packed? or is it normal for them to just be in a sealed plastic bag.
overall had a shit couple weeks so i havent really been posting as much as i would usually especially this thread.

assuming you're talking about pourover whatever, it "matters" because what grind size you use affects how fast the water pours through... it's already nauseating trying to explain why or why not it would matter.

long story short, in espresso when you are just forcing the water through, you want hottest water cause it just works. ok?

oh and people saying it matters with bitter roast, but i would argue you could shorten percolation and then it "wouldn't matter". as in hot water is optimal, but you would have to have a really fast extraction for stuff like bitter roast.

the actual technique is totally different.
