I was inspired by someone's post to make a shepherd's pie today and it turned out great. I completely winged it because this isn't my first rodeo, and honestly rushed through most of the steps but it was still delicious and the perfect consistency. Next up I'm going to make a pot pie. I have an old recipe, I hope it holds up.

Just made steak pies for the first time.
Hot water pastry, beef chuck, celery, mushroom.
The beef stock I bought for the filling and gravy ended up too weak flavor-wise, so I beefed it up with a scoop or marmite. That definitely helped.
I made gravy with a medium-brown roux and the stock after simmering the beef. Again the stock was weak but the delicious roux made up for it.

I'm in the middle of making a cottage pie. Didn't want to mash potato so opted to boil them whole. Going to slice them and brush with melted butter and season. Deciding on whether to use sharp cheddar or parmesan on top.

no food processor for the taters? i always have my wife do them. spray some cooking oil on top of them and they will have some nice crispy edges at least and butter after serving

op, pot pie is very different, you may need to make pastry (but pillsbury pie crust will work too). also look into alternative gravies, my brother made a creamy one with lemon in it and it was great

Looks good mate, like potatoes au gratin.

After all these years, I never converted ground beef juices into a roux and gravy until I made this but damn that was the move. I had a lot of extra sour cream (for the potatoes) and I threw some in the gravy, which worked out great.

I have also made one after that thread, planned on a cottage pie but found some relatively affordable lamb mince so it ended up being a shepherd's pie. My first time making it, it was very tasty.
However, what's the point of using lamb? With the herbs and the sauce, the flavor of the lamb isn't really coming through. Beef would have a different texture but if I used a mix of beef and pork I bet it would taste basically the same, and the meat would cost half of what it did.
Next time I make it I'm making a cottage pie.

Also, here's a "pie" recipe I enjoy from time to time(I think of it more as a casserole but it's as much of a pie as shephard's pie is):
>cube some chicken breast
>season well with at least salt and pepper, optionally whatever herbs and spices you see fit
>alternatively you can use chicken bouillon cubes as seasoning
>brown it in a pan
>mix in a LOT of chives/green onions
>put in your pie vessel of choice
>crumble some wet mozzarella cheese on top
>cover with boiled potatoes
>(personally I like them diced in smal pieces for texture but slicing them if you're lazy is probably fine)
>brush with some melted butter or oil and season with salt
>put it in a preheated oven until the potatoes start to brown
>cover the potatoes with some shredded cheese, I like gouda or cheddar
>bake/broil until the cheese is browned
If you did it right the melted mozzarella with the chicken and chive juices should be bubbling out on the sides from underneath the crust. The chicken will not be juicy but when it's cut into small pieces and mixed with the sauce created by other ingredients it's not a problem. You can use a different cut of chicken but personally chicken breast and chives is somehow the best combo.
