I like to make corn chowder and stew in the winter. One of my go to meals is what we called poor man's dinner. ground meat in a white gravy served over rice. if I can find chipped beef I'll make shit on a shingle with sliced hard boiled eggs.

Its a bit basic, but a simple ham and cheddar soup with potatoes always hits the spot for me when it's cold out. Doubly so if you throw some bacon/chives and whatever else to make it a sort of loaded baked potato soup.

Chicken and dumplings. Cheap, filling, and really tasty. Just buy a whole ass chicken an throw it in the pot. Use sour cream to make the dumplings. Freezes well if you want to make a ton at a time, and make more dumplings if you need to stretch it.

Pork chops pan-seared then cooked in cream of mushroom soup, bit of chicken broth, bit of thyme/salt/pepper. Simmer for a bit, then serve over white rice. Dead simple, but satisfying.
