I prefer my chicken chopped rather than shredded, otherwise the texture gets all fucking weird.

I do mayo, whole grain mustard, salt, pepper, garlic powder, onion powder, diced onion, celery, sliced almonds and whole grapes. Use some nice seedy thick brown bread with some additional mustard and some leafy lettuce '

most people will scoff at ham salad and I don't blame them. my granny would throw in giant chunks of scallion, celery, and onion but I still loved it. haven't had it in a long time but I always use it as a device to make non-whites mad. they can't stand the thought of ham salad

For me, it's Waldorf chicken salad on lightly toasted grain/wheat with green leaf lettuce, tomato, red onion, and dill pickle that is slightly sweet. Depending on your dressing, perhaps a bit of honey or dijon mustard.
