The gravy is down to you but essentially a Tandoor imparts a smokey flavour, you can get spice mixes for tandoori and just grill your meat until it has a few 'burnt bits' .

the meat is covered in sauce, and there is no need for any sort of tenderising element like pear because the meat will get tender by simmering. the marinade doesn't penetrate meat beyond 1cm at most, which wouldn't matter even if it did because it's smothered in sauce.

You're missing the point mate.

If you have marinaded your meat and cooked it off (with a Tandoor or grill), you don't add it until later, it's never stewed with the gravy.

Vindaloo is not a stewed dish, one of it's main components is spuds! Again, best added later otherwise it's mush.

What they use is even worse than butter, it's ghee or clarified butter which has none of the few benefits of real butter. It's why Indians are pretty unhealthy if they escape abject poverty, in spite of their vegetarian diet. My mothers half indian and used to use that stuff all the time and made me into a lil fat boy. Thank God she started cooking more of my Italian dads food when I turned 7.

Used to remember everything that simmered in my mothers cooking had half an inch layer of oil. Dhaal, Tikka, lamb curry etc. I also see this in Indian restaurants when I go out with friends. Indian food is great l, but man it's unhealthy. Eating Indian is a once a week thing for me because of my previous problems with weight. Mediterranean is simple, healthy whilst being tasty as well. I get it, India, calories are hard to come by, but in the west, it's the opposite. Lots of Indian men are out of shape because of moms/wives cooking

Ghee is actually more healthier than regular butter. The problem though is that Indian desserts and sweets have a ridiculous amount of sugar in it to rival the US if not exceed the US in diabetes.
